I used to love to bake sweet desserts and sauces before we started eating low carb high fat/keto back in June. For the most part I had pretty much stayed away from eating the lchf desserts unless our keto daughter made something for dessert when we went to her house. I always added it into my macros and I was fine.
When I got my blood sugars down in the 80s consistently I thought I was in the safe zone, so I started making desserts with my non-grain flours or meals and using the non-carb sweetners. My preference was Splenda. I didn’t like the taste of the others out there like the Swerve or the Erythritol. There are others out there too like Sweet Leaf or Stevia. They leave a bitter taste for me.
When I started on low carb high fat, I only used one little packet of Sweet and Low in my magic coffee. That I could get by with.
When I was spending more time in the Reversing Diabetes group learning from the things posted, I saw the comments from people using the sugar substitutes and those who were against it. I didn’t really get into the discussions because my one packet a day wasn’t causing me any negative effects.
Unfortunately, I started venturing further out from the shoreline and I got caught up in a riptide! Help! Somebody throw me a lifeline! After about four weeks of going on a baking frenzy using my non-grain flour and using lots of Splenda, I had an awakening in a major way. My blood sugar bounced up to 117 the other day. It had slowly crept up to over 100 and then the major bounce.
I also started in the last 10 days seeing my weight start creeping up and my stomach was starting to come back. No!
Also during that time, I was over doing my protein. I had been doing the intermittent fasting since last July and had the flow of doing my magic coffee and one meal a day. All was well until a month ago. As I was using more of the fake sugar, I found myself more hungry. I knew enough not to go for the carbs, but I was eating more protein and overeating the protein makes glucose and spike the blood sugar. (My hubby’s blood sugar was running higher also because of the “sweets” I was making.)
So I had a talk with myself and told myself that eating all the sweets is what got me into this mess to start with and that even the fake stuff had to go. I got back to my food list, got my magic coffee going and also got back to walking an hour every day now. I go to the Y with the kids and do the treadmill or I do my “Walk Away the Pounds Video” for three miles using the bands.
I can attest to the fact that using even the fake sugars has a negative effect on the body. I have experienced it. Since I immediately got back to my food list, my blood sugars dropped back down into the 90s and I even lost a couple of pounds of what had crept back on. I am not willing to go back to pre-June 2016.
And with that, I went to one of my favorite doctors online, Dr. Mercola. He had a plethora of information on sugar and on the fake stuff. I am posting the articles for you to read on you own since I don’t want to plagiarize anyone’s work.
I was a carb addict and I guess I still am which is why I need to stay away from anything that is sweet whether it is with real sugar or the fake.

In 2004 I lost 50 pounds but I sabotaged myself by thinking I could go back and eat small of amounts of the forbidden stuff. That lead into major indulgences which lead to gaining all the weight back plus more. There were other weight losses and diets along the way, but I always gained it all back. I just won’t do that anymore. I am still 50 to 60 pounds from my goal weight plus keeping the blood sugar down in the low to mid 80s. And from my awakening, I know I cannot even indulge in the sugar free desserts or foods. It is vanity to even believe I can.
Most of us have to learn the hard way instead of heeding the warnings of others who have studied and researched on these things. I am one of those. So, I hope you will glean from the information and not venture from the shoreline like I did. I am back on the beach and have my feet stuck in the sand. Think that I will just stay there and enjoy the sun.
