I am amazed at how long we have been at this way of eating now and we just won’t compromise. When we were at a conference recently, we could have said, “Just for now we can have that piece of pie or that loaded baked potato and then we will get back to Keto when we get home.” But we didn’t! We stayed the course and didn’t veer off one bit. Our last night in Oklahoma, the waitress brought my dinner salad with a big hot beautiful croissant and it smelled divine. We had told them to hold the croutons and even with our order, one could tell there were minimal carbs in the order. Out of habit they slapped that croissant right on top of the bowl and brought it to our table. Both of us got one. That is not Leon’s soft spot…it’s mine! He knew that I was fighting off the flesh at that time. He just smiled. But I chose to take it and just lay it on a napkin beside my salad bowl. I was not going to give in and lose all that I had worked so hard for…my health.
My poor sweet hubby longs for the old stuff once in a while, but I remind him that old stuff kept us sick and on medication. He knows that but we just have to keep each other on track.
There is a scripture that is great for those of us who need to stay strong.
Ecclesiastes 4:9-12 (ESV)
9 Two are better than one, because they have a good reward for their toil. 10 For if they fall, one will lift up his fellow. But woe to him who is alone when he falls and has not another to lift him up! 11 Again, if two lie together, they keep warm, but how can one keep warm alone? 12 And though a man might prevail against one who is alone, two will withstand him—a threefold cord is not quickly broken.

Sugar/carbs are an addiction just as alcohol and drugs are. It’s harder with carbs because we were created to use food for fuel for our bodies. Unfortunately, our food got perverted from when it was created and it was good. Now it is refined and processed. Even our veggies and fruits have been genetically modified and are not what they were originally created to be. You just cannot out do God! Our meat gets pumped with antibiotics, hormones and other chemicals. Better be praying over your food when you eat it! Mercy!
Last night our daughter and son-in-love dropped off their furry babies for us to keep for a few days while they were out of town. I had made a crustless cheesecake the night before so I had a dessert ready. I needed something for a meal so I made a taco casserole, roasted some cauliflower and steamed some broccoli. Everything just tingled the taste buds. It was a high fat low carb meal and we were stuffed. Here are my recipes.
Makes 15 servings (Great to freeze in individual servings for later.)
3 lbs. of ground beef cooked (I get 80/20 so I leave the liquid in.)
1 Onion chopped fine (Sautéed with meat)
3 Tbsp of garlic powder
3 Tbsp of onion powder
2 Tsp of salt
1 Tbsp of cumin powder
2 Tbsp of fancy chili powder
1 28 Oz. can of tomato sauce
Add all the above together after the onions have become translucent in the hamburger mixture.
1 Cup of heavy whipping cream
Mix the cream and eggs together
3 Cups of shredded sharp cheddar cheese
Add all of these together and pour into a greased 9x13 pan. Back at 350 for 45 minutes or until knife comes out clean.
1 Serving = 316g Cal; 5.6g Carbs; 19.3g Fat;28 .7g Protein
Makes 8 servings
In a large bowl:
1 Head of Raw Cauliflower sliced
Drizzle with olive oil
Salt and pepper
Sprinkle garlic powder and/or any other herb you enjoy.
Pour mixture onto a cookie sheet with all the oil from your bowl.
Bake at 400 for 20 to 30 minutes. You want these nice and golden.
Macros: 1 serving = 150 Cal; 6.3g Carbs; 14.1g Fat; 2.3g Protein
**Most of the fat will still be in the cookie sheet
(I had to learn how to properly steam broccoli from my daughter. I used to cook it until it was mush.)
Cut up your broccoli and place in your steamer. After the bottom pan comes to a boil, place your steam over it and let it steam for 8 minutes. Take the steamer off the pot of boiling water and pour your broccoli into a bowl. Pour ½ cup (1 Stick) of melted butter over your broccoli , salt and pepper then serve.
Macos: 1 serving = 223 Cal; 3.8g Carbs; 23.2g Fat; 1.8g Protein
**You are probably not getting all that 23.2g of fat in your serving of broccoli since most of it will be in the bottom of the bowl.
Preheat oven to 325. This will bake for 90 minutes in my oven.
4 - 8 oz. packages of Philadelphia Cream Cheese
6 – Large eggs
1 – Cup of Swerve or keto approved sugar
1 – Cup of sour cream
2 – 2 Tsp of Vanilla
Cream your cream cheese, sugar, sour cream and vanilla together. Add eggs one at a time and beat until all are mixed in. Spray a cheesecake form pan with coconut oil and wrap the outside with foil. Keep the foil from the top of the pan. Pour your batter into the cheesecake pan and place it is a water bath with no more than 1 inch up the sides. Place in your preheated oven and back for 90 minutes.
After 90 minutes open the oven door and let the cheesecake sit for 30 minutes. Take it out after the 30 minutes and let it sit until cooled off. Take the ring off and wrap with a plastic wrap and place in frig. Cut into 8 slices.
I make these the day before I need them.
Macros on this recipe:
1 serving = 382 Cal; 4.1g Carbs; 33.9g Fat; 9.8g Protein
So, you know what we are having for dinner tonight…yep you guessed it! Leftovers!
